Rolling £5,000 sales window
The planner starts with the weekly gross sales forecast and removes VAT to calculate expected net sales. It uses a group-average VAT assumption of 18%, rather than the headline VAT rate, so the conversion reflects the average sales mix across the Amorino UK estate.
The expected sales level is then annualised and applied to the Amorino labour curve. The curve adjusts the affordable labour percentage automatically as sales increase or decrease, reflecting the fact that higher-volume shops can generally operate at a lower labour percentage because a proportion of staffing is fixed.
The resulting labour allowance is converted into hours using a fully loaded employment cost of £16.50 per hour. This is not simply the hourly wage paid to team members. It is intended to represent the broader cost of employing and operating the team, including direct pay, employment on-costs and an allocation for additional management resource such as Area Manager time and other management support.
The planner then compares the financially affordable hours with the shop’s minimum operating requirement. This consists of the public opening hours plus the additional time required before opening and after closing. Where the financial allowance falls below this operating requirement, the operating requirement becomes the minimum practical rota.
If the shop enters the hours it actually intends to schedule, the planner also calculates the resulting labour percentage and shows the additional spend or saving compared with the recommended rota. This makes it possible to see the financial consequence of a rota decision before the week begins.
These settings affect the operating-hours floor. Most users only need to set them once.
When enabled, the Monday–Sunday schedule sets weekly public opening hours automatically. Opening/closing staff-hours remain separately editable.
